"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Preparation

In a large bowl, beat butter, cream cheese, milk, and sugar until light and fluffy. Beat in egg yolk.

In a medium bowl, whisk together flour and baking powder and stir into butter mixture to make a stiff dough. Cover with plastic wrap and refrigerate for several hours or over-night.

Heat oven to 400º. Roll out dough between lightly dusted sheets of parchment paper to ¼" thickness. Cut with 2¨ round cookie cutter. Place cookies on ungreased baking sheets about 1 inch apart. Make an impression in the center of cookies with a flour-dusted thumb or back of spoon. Spoon on about 1 teaspoon filling. Repeat with the remaining dough and any scraps.

Bake 10-12 minutes or until lightly browned. Remove from baking sheets and cool completely on wire racks. Store in an airtight container. Sprinkle with confectioners sugar just before serving.
