1/2 cup shortening (slight)
1/2 cup granulated sugar
1/2 cup packed dark brown sugar
1 egg
3/4 teaspoon vanilla
1 cup flour
1/2 teaspoon soda
1/4 teaspoon salt
1 cup quick-cooking oats
1 cup total, Wheaties or Cornflake cereal
1/2 cup shredded coconut (optional)
1/2 to 1 cup peanuts
1/2 cup chocolate, butterscotch, or peanut butter chips

Directions:
Directions:
Heat oven to 375. Mix shortening, sugars, eggs, and vanilla thoroughly. Stir in remaining ingredients. Drop by rounded teaspoonfuls, 2 inches apart onto ungreased baking sheet. Bake 10 minutes. let stand about 3 minutes before removing from baking sheet. Makes 3 dozens cookies.

When our dad made these delicious cookies they never lasted long. It was one of our favorite family dishes.

I think because of Dad's hardships as a child he worked very hard at having the ideal family atmosphere, home, and life. However, nothing much ever worked out for dad. But he never lost heart. He took us on many fun outings throughout the years.

At home while we were growing up, he never liked to use paper plates. He did not like convenience foods, like hamburger helper and so on. He liked cheese, and he liked hamburgers but he did not like cheeseburgers. Go figure. He gave his all and did his all for his family. We went on numerous family vactions. He was a home body. He drove truck for the state of Wisconsin, he drove the Otomobile which was a very cool hearing unit that went throughout the state testing children's hearing. He also worked at Volkfield in supply. He farmed on our VA road farm, and the Oakdale chicken farm. He was brave in so many ways. Bought and sold horses, cars, trucks, houses, land and more. And he did all always with his family in mind. He drove older vehicles so that he could give more to us. Because he was a home body my mother chose to leave him. He never cheated on her all those times he was a way. He was fairly easy to get along with. Mom just always wanted what she wanted. Before her death, she told me she had it all wrong. she finally recognized the terrible cost of her erroneous thinking and choices. Wish he would have been here to hear her say that. Just as a great example of his integrity, Dad provided mom a home after she left her abusive husband. He continued to support her with money, fixing anything she needed, provided cars, cooked for her, and supported her through her long illness. WOW. Think of that, showing support like that for a woman who had 2 affairs and divorced him for no reason except he wasn't social enough. That is a great man. He would always say, if you are having trouble sleeping pray. I wonder how many nights he did that.
