2 1/2 cups sugar
1/2 cup Water
1/2 cup white syrup
2 egg whites
1 tsp vanilla

nuts if desired


Directions:
Directions:
Cook sugar, syrup, and water until it spins a thread. ( hold spoon above the pan high and the syrup will actually drip until it curls up like a thin thread). Then pour 1/2 of it slowly into stiffly beaten egg whites. Beat as you pour. Cook the rest of remaining syrup until it hardens in water. (hard boil stage). Then add it beating until creamy. Add vanilla. I beat until the glossiness leaves Pour into a buttered pan (smaller than 9x13) or Glenda usually dips it by spoonfuls onto wax paper .

Note from Glenda; Can you imagine beating this stuff by hand without a hand mixture? Yet Cerdelia and my Mom Bessie did it willingly. It can be fun as you can divide a batch into different colors. Sometimes light green and add a touch of mint flavoring. Or chopped maraschino cherries in pink. Best with a few chopped black walnuts. Pecans are good. If you do not like nuts you can place on individually on top of candy pieces for others. Enjoy
