2 lbs of orange roughy

Salt
Pepper

1 tbs of cornstarch
4 tbs of all purpse flour
1 egg beaten
4 tbs of Italian bread crumbs

3 tbs of oil
2 tbs of butter

Directions:
Directions:
Rinse fish
Place fish in a bowl
Add 2 tbs of salt
Cover with cold water
Refrigerate for 2 hours

Remove
Rinse
Pat dry


Place flour in a shallow dish or a plastic bag
Add cornstarch to flour
Dredge fish in flour to lightly cover
Shake off any access flour

Dredge fish in egg
Dredge fish in Italian breadcrumbs


Sprinkle with pepper


In a large frying pan, heat oil and butter
Place pieces of fish and sauté for a few minutes on each side on medium heat
Remove and place on a pepper towel to soak up extra fat.

Finish in a 350º F oven for 7 minutes to cook through
