½ c. (1 stick) plus 6T. butter, softened
¾ c. light brown sugar, firmly packed
½ c. granulated sugar
2 eggs
1 tsp. vanilla extract
1½ c. all-purpose flour
1 tsp. baking soda
1 tsp. ground cinnamon
½ tsp. salt (optional)
3 c. Quaker™ Oats quick or old-fashioned, uncooked
1 c. raisins

Directions:
Directions:
Heat oven to 350º. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy. Add eggs and vanilla; beat well. Add flour, baking soda, cinnamon, and salt; mix well. Add oats and raisins; mix well. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Bake 8 to 10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered. Makes about 4 dozen cookies. Variation: Bar cookies, ungreased 13x9x2" pan; bake 30-35 min. Recipe Notes: For high altitudes, increase flour to 1¾ cups.
