Rind, juice and pulp of 1 large lemon
1 Cup butter @ room temperature
1 Cup granulated sugar
2 eggs
1½ tsp vanilla extract
1½ tsp lemon extract
2½ AP flour
1½ tsp.. baking powder
½ tsp salt

Directions:
Directions:
Grate the rind of a lemon and set aside. Slice lemon in half, ream juice & pulp.

Cream butter, sugar and lemon rind with an electric mixer until light and fluffy.

Blend in vanilla and lemon extracts, along with juice and pulp. Remove any seeds

Stir flour, baking powder and salt together.

Gradually add lemon mixture.

Form into a dough 2" x 6" logs, seal in plastic wrap and refrigerate overnight.


Preheat oven to 375

Cut dough into ½' slices and space apart 2" on a greased cookie sheet.

Bake 16 to 20 minuted, avoid overtaking.

Cool for 5 minutes before transferring to cooling racks.

Dust with powdered sugar.
