Grandma's Apple Fritters Recipe

3 to 4 Granny Smith apples (or apples of your choice), peeled, cored, and sliced to your desired thickness (I prefer a thicker slice)

1 cup flour
2 teaspoons of baking powder
1/2 teaspoon of salt

2 tablespoons of sugar
2 eggs (optional - beat egg whites separately from the yolk for fluffier batter)
2/3 cups milk
1 teaspoon of vanilla extract, brandy or a dash of lemon juice

optional dash of cinnamon
vegetable oil for frying

powdered sugar for dusting

Directions:
In a medium bowl, whisk together the flour, baking powder, salt and optional cinnamon. Set aside. In separate bowl, beat together the sugar and eggs on medium speed until fully combined. Reduce the speed to low and add the milk (and optional vanilla or brandy). Then add the flour mixture. Slowly mix until just combined. Will look like thick pancake batter. Fold in the apples (add optional lemon juice to apples prior to folding into batter). Fill a frying pan halfway with oil. Heat over medium heat until the oil reaches 375°F with a candy thermometer.

Drop individual apple slices covered with batter into the oil and fry until golden brown. Flip and fry until the opposite side is golden brown. Estimated total of 3 to 5 minutes.

Transfer to a paper towel-lined cooling rack or plate. Repeat with the remaining batter. Sprinkle Fritters with powered sugar prior to serving.

My French Canadian mom would make these for breakfast, dessert, or just as a delicious after school snack. This recipe was passed on from her mother/my grandmother.
