4 large sweet potatoes
2/3 cup firmly packed brown sugar
1 teaspoon grated orange rind
4-6 tablespoons orange juice
10 large marshmallows
2 cups flaked coconut toasted

Directions:
Directions:
Wash sweet potatoes, place in a large dutch oven and cover with water, simmer until tender, 30-45 minutes. Let cool to the touch, peel and mash. Stir in brown sugar, orange juice and orange rind. Mix well.

Toast coconut in oven at 350 degrees until light brown. Shape potato mixture around a marshmallow roll in coconut. Place potato balls in a 13 x 9 x 2 inch baking dish and bake at 350 degrees for 15-20 minutes.
