(Mix 1)
1 c corn meal
1 c flour
2 T sugar
1 tsp. salt
2 tsp. baking powder

(Mix 2)
1 egg
1 c milk
2 T oil (added after all mixed)

(Alternate Mix 2)
1 egg
1 c buttermilk
1/4 tsp baking soda

Directions:
Directions:
Combine Mix 1 in order, then add in Mix 2 and stir only until mixed, do not over stir.

Add oil

Pour into hot greased heavy metal pan, preferably cast iron skillet.

Bake.

425º

There were two copies of this recipe, my mom thinks that the buttermilk option was the one grandma used most often. The baking soda is to make the buttermilk more fluffy when baked.

Grandpa liked to add more sugar to it, but my mom said that Grandma hated it that way, and so its better without. This is not a sweet cornbread, it is a savory one.
