Butter Pecan Turtle Cookies Recipe

Crust:
2 cups flour
1 cup firmly packed brown sugar
½ cup butter or oleo softened

Caramel Layer:
⅔ cup butter or oleo
½ cup firmly packed brown sugar
1 cup pecan halves

After Baking:
1 cup milk or semi-sweet chocolate bits

Directions:
Directions:
Preheat oven to 350º.

Combine crust ingredients, mix at medium speed 2-3 minutes until particles are fine. Pat firmly into ungreased 13 x 9 x 2 pan.

Sprinkle pecans evenly over unbaked crust. Prepare caramel layer by cooking butter and brown sugar stirring constantly over medium heat until entire surface begins to boil (boil 30 seconds to 1 minute stirring constantly). Pour caramel evenly over pecans and crust.

Bake 18-22 minutes until caramel layer is bubbly and crust is light brown.

Remove from oven. Immediately sprinkle with chocolate chips. Let melt for 2-3 minutes then slightly swirl to create marbleized effect. Do not spread!

Cool completely then cut into bars.

These cookies were always a crowd pleaser at Christmas time. Roy loved pecans so these cookies were his favorite. Butter pecan ice cream was his favorite too!
