¾ cup soft shortening ( I use ½ cup butter softened & ¼ cup crisco solid)
1 cup sugar
2 eggs
¼ teas. lemon extract
¼ teas. vanilla extract

2 ½ cups flour
1 teas. baking powder
1 teas. salt

ICING:

4 cups powdered sugar
½ cup butter
2 teas. vanilla extract
food coloring

Mix top 5 ingredients thoroughly using electric mixer
Sift dry ingredients together and stir in

Chill at least 1 hour or overnight
Roll out ⅛ inch thick with rolling pin
Cut out shapes

Bake at 400º (they cook quickly so watch)

For frosting, melt butter on top of stove, add powdered sugar. Add milk ( a little at a time and a little goes a long way) to get the right consistency. Separate into small bowls and add food coloring. Also keep milk at the table while decorating to keep icing from drying out.
