1 cup flour
1/2 tsp baking soda
1/4 tsp kosher salt
1 tbsp pumpkin pie spices
1/2 cup organin coconut oil
1/2 cup brown sugar
1/4 cup sugar
1/2 cup real pumpkin puree
1 tsp vanilla
1 egg
1 cup organic rolled oats

Preheat oven to 350º
Line baking sheets with parchment paper
Add all dry ingredients, flour, baking soda, salt and pumpkin pie spices in small bowl, stir well

In large bowl "cream together" sugars and coconut oil for 2 min with hand mixer
Add pumpkin, vanilla & egg - mix well with hand mixer
Add dry ingredients to wet ingredients in large bowl, mix well then add/fold in organic oats
Spoon out 12 mounds of cookies on the parchment paper about 1 inch apart.
Bake for 12-14 mins., Test with toothpick
These cookies are supposed to be soft, not hard, so don't over bake!!
