¾ cup butter
1 cup firmly packed brown sugar
1 egg, lightly beaten
¼ cup molasses
2-5 tbsp crystallized ginger, chopped
2 cups all purpose flour
2 tsp baking soda
1 tsp cinnamon
1 tsp ground ginger
½ tsp ground cloves
¼ tsp salt

Directions:
Directions:
Cream the butter, brown sugar, molasses, and egg together until smooth. Mix in crystallized ginger. In a second bowl mix flour, baking soda, cinnamon, ground ginger, cloves, and salt. Add flour mixture to butter mixture a little at a time, stirring well. Wrap dough in plastic wrap and chill for at least half an hour. Roll 1 tbsp of dough into balls and dip in sugar. Place dough balls on baking sheets, allowing room to spread. Bake at 375º F for 10-12 minutes. Cool on sheet then transfer to cooling racks.
