8 large potatoes
1/4 cup butter
8 oz. cream cheese, cubed
3/4 cup sour cream
Salt & pepper to taste
1/4 cup bread crumbs
1/4 cup parsley

Directions:
Directions:
Peel and cook potatoes, then drain and return to heat to dry them out. Mash potatoes with half of the butter, then add cream cheese and sour cream . Add salt and pepper to taste .Using an electric mixer, beat until creamy. Spoon into a greased casserole dish. Melt remaining butter, add bread crumbs, mix well and sprinkle over top of potatoes. Cool, cover, and refrigerate if making ahead of time . Bring back to room temperature before baking. Cover with foil before baking. Remove foil for last 10 minutes .

350 º F 20 minutes
