1 eye of round roast (about 2 lb), cut into bite sized pieces
4 beef boullion cubes
4 cups of water
1 container of V8 juice
1/4 c of Worcestershire sauce
1 large bag of mixed vegetables (I prefer green beans, peas, and corn)
2 potatoes cut into small pieces
1 tsp salt
1 tsp pepper

Directions:
While roast cools, begin water on medium-high with boullion cubes. When dissolved, add potatoes and allow to cook for 10 minutes. Add all other ingredients. Cook for 20 minutes at medium-high then reduce to low to cook for at least 30 minutes.

I typically make this with leftovers after we have had a roast for dinner. I also use vegetables that are leftover as well. I find doing this makes the best soup. The longer it simmers the better and it is even better warmed up the next day.
All that said, I do not actually have a recipe, so to speak, so this is my best guess.
