Crust and topping:

1 cup sifted flour
¾ cup oatmeal
1 cup brown sugar
½ cup melted butter
1 tsp cinnamon

Filling:

4 cups diced rhubarb
1 cup sugar
2 Tbsp cornstarch
1 cup water
1 tsp vanilla

Directions:
Directions:
Press half of mixed crust crumbs into a greased 9" baking pan. Cover with rhubarb. Mix the sugar, cornstarch water and vanilla. Cook until thick and clear. Pour over rhubarb. Top with remainder of crumb mixture. Bake at 350º for 1 hour.
