Ingredients: 1 lb. butter or margarine 1 1/2 lb. light brown sugar 6 eggs 1 1/2 lb. (6 c. sifted) flour 2 tsp. baking powder 1 tbsp. vanilla 1 tbsp cinnamon Juice and zest of 1 lemon 16 oz. dates, each cut into 4 pieces 1/2 lb. shelled walnuts (2 Cups)

Directions: |
Directions:Cream together butter and sugar until light and fluffy. Add eggs, one at a time, beating each into the mixture. Add flour, baking powder and cinnamon a little at a time. Stir in vanilla, dates and nuts. Bake in a greased tube pan at 275 F for 3 1/2 hrs. |

Notes: Every autumn, Grandma Cain (Julia Blanche Mintz Cain) made her Hermit cake. She said it was Uncle J.D.’s (James Daniel Cain) favorite. I got this recipe from Mother after Grandma died. I always associate this cake with Thanksgiving when all Grandma’s family would gather at her house for dinner. Uncle Reece would shake the pecan tree and all of us kids would gather up the nuts and start shelling. There were always pecan and sweet potato pies as well as a sweet potato pudding. The fruit cakes that had been baked in September were brought out and sliced. Grandma Cain would cook up a pot of collards, drain them, carefully press out the water and painstakingly stand there with two knives and finely chop the greens. We enjoyed a wealth of vegetables with the ham she usually baked for Thanksgiving. Recipes make for good memories.
