1 cup butter, room temperature
½ cup powdered sugar
2 tsp vanilla extract
pinch of salt

2 cups all-purpose flour
½ tsp baking soda

1 cup finely chopped pecans

1 cup powdered sugar for coating

Directions:
Directions:
350º 13-15 minutes

Preheat oven
In large bowl, beat together butter, powdered sugar, vanilla and salt until light and fluffy
Gradually beat in flour and baking soda until well blended
Stir in pecans
Drop dough by 1½" teaspoonfuls, 1½" apart, on ungreased baking sheets.
Bake 13-15 minutes, until edges begin to brown lightly
Remove cookies from baking sheets
Cool slightly on racks
Pour powdered sugar into paper bag.
Place several cookies into bag and shake to coat with sugar
When mostly cool, coat with sugar a second time
