Directions:
Preheat oven to 325º.
In a large bowl, cream the butter sugar and cream cheese. Add the vanilla and egg yolk and beat well. Add the flour, salt and cinnamon and mix well again.

On an ungreased cookie sheet, press out the cookies. Bake for 10 minutes or until bottoms are golden brown. The top of the cookies will remain a light color.

Personal Notes:
I have been baking these cookies at Christmas since 1968. My biggest tip is to buy a good cookie press. Also if the dough gets too warm and does not form the cookies well, put it in the refrigerator for a little while.

You can easily color the dough with food coloring, for example green for Christmas trees. Red and white dough can be placed side by side in the cookie press and you can make candy canes. There are many possibilities for decorating the cookies before you bake them. Candied cherries, cinnamon sugar and nuts and sprinkles can all be used.

There have been a couple of time when my Sugared Pecans (also in this cookbook) did not turn out exactly right. When that happened, I chopped the pecans and used them on the tops of these Spritz cookies as well as on Jackie's Yummers (also in this cookbook).
