1 cup of butter softened
1/2 cup sugar
3/4 cup of brown suger
2 Tsp of vanilla extract
2 eggs
2 1/4 cups of flour
2 tsp of cornstarch
1 tsp of baking soda
1 cup of semi-sweet chocolate chips
24 soft caramels--Werther's Original is a good option.
1/2 tsp sea salt

Directions:

1. Preheat oven to 350º
2. In a large mixing bowl, combine the flour, cornstarch and baking soda.
3. Blend the butter with both of the sugars and vanilla extract with a hand held mixer or stand up mixer. Blend until throughly combined.
4. Add int he eggs one at a time blending between each one to make sure they are thoroughly incorporated.
5. Then stir in the dry ingredients into the wet ingredients. You may mix by hand or mixer.
6. Then fold in the chocolate chips.
7. Refrigerate the dough 1-2 hours to help them not flatten out when baking.
8. Then create approximately 1 tsp size balls out of the dough.
9. Place an unwrapped soft caramel on half the dough balls
10. Top the dough with the caramels with the remaining dough balls and roll to make sure that the caramel is completely covered with the dough.
11. Place the balls on the baking sheet approximately 2 in apart. Sprinkle the sea salt on top of the dough balls.
12. Bake for 8-10 minutes.
13. Remove them from the oven, allow the cookies to cool on the cookie sheets for approximately 5 minutes and then transfer them to wire racks sto cool completely.

I use the whole bag of chocolate chip cookies, because you know...chocolate.

When cooling I found waiting for 8 minutes before transfering to the wire rack was a bit easier. The cookies are REALLY gooey because of the caramel.
