6-8 MEDIUM YAMS
1 1/2 TBS BUTTER
1 1/2 Tbs cornstarch
1/4 tsp salt
3/4 c orange juice
1/3 cup mild honey

optional 1/4-1/2 cup bourbon

Directions:
OK to make day ahead and reheat.

boil yams until tender. peel and cut in quarters/ chunky slices.
arrange in butteered shallow pan such as casseroll dish or 9x13

Melt butter, add cornstarch, salt and OJ. and honey. Optional add bourbon. Stirring constantly bring to boil. Pour over yams. Bake 325 F 30 minutes covered.

If heating from fridge plan on 45 minutes to heat thru.
