1/2 lg. cake yeast
3.4 cup milk (lukewarm)
1 Tbsp. sugar
4 eggs, beaten
1 tsp. vanilla

6 c. flour
1 tsp. salt
2 tsp. baking powder
1 lb. Crisco
Baker's Apricot filling (or filling of choice)

Break apart yeast into 3/4 cup of lukewarm milk. Add 1 Tbsp. sugar to activate yeast.
Mix dry ingredients and Crisco together as for pie crust. Add wet ingredients and mix all together. Roll out in granulated sugar. Cut in squares. Put teaspoon of filling in center of each square. Fold 2 opposite corners to center. Dip top of each kolachki in beaten egg white, then in sugar. Bake on cookie sheet at 400º for about 12 minutes.
