1 cup Crisco
1 cup Sugar
1/2 cup Molasses
1 Egg
2 teaspoons Baking soda in 3 Tablespoons of Warm Water
1 teaspoon Vanilla
1 teaspoon Salt
4 cups Flour

Filling:
1/2 lb. chopped, pitted Dates
1 cup Sugar
2 Tablespoons butter
2 heaping teaspoons Cornstarch
1 teaspoon Vanilla
1 cup Water

Directions:
Directions:
In a large bowl cream together Crisco and sugar. Add the Egg, Vanilla and Molasses.
Mix well. Finally add in the flour, baking soda and salt. Form a nice soft dough.
Roll out and using a round cookie cutter cut out all the dough. Place circles on the cookie sheet, drop filling by heaping teaspoon onto each. Place another circle on top, pressing all around the edges to seal in filling. Make a slit in the center of each top to allow steam to escape. Bake at 325 degrees for 10.

Filling:
Place all filling ingredients together in a small pan on top of the stove. Bring to a boil stirring constantly until thickened. Allow to cool before filling cookies.

This is an old fashioned recipe, made at a time when anything sweet was a GIANT treat. I remember making these and bringing them over to Uncle Bob's when they moved to Leominster. He saw them and gasped, "Mother used to make these!"
My Grammy was an amazingly strong, faith filled woman. She was quiet,, humble and never tooted her own horn, always taking care of everyone and everything around her.
She raised her 8 kids (losing the 9th as an infant) during a time when they had Nothing. When my grandfather died, she had 4 little kids and a farm to work all by herself. She could make anything out of anything, though. Every night after dinner the whole family knelt together to pray the rosary. I would say THIS is what made those people so great. Sure, they had a great work ethic, but they were kind and generous, cared about their family above all things, always lending a hand. Their faith in God gave them the hope that carried them through all the tough times. I am so proud to be a part of that Heritage, and YOU should be, too!
