2 c. brown sugar
1 c. shortening
3 eggs
¼ c. milk
½ t. salt
1 t. baking soda
1 t. vanilla
Flour to roll (about 4 cups)

Filling:
1 c. dates (I use more...about 1⅓)
½ c. sugar
⅔ c. water
dash of salt
splash of vanilla

Directions:
Directions:
Cream sugar & shortening. Beat in eggs, milk, & vanilla.
Add soda & salt to the flour and stir in to the creamed mixture.
Dough will be too soft to roll at this stage. Place in fridge for at least an hour or overnight before rolling out.

Mum would often shape them into half moons to yield more cookies.

This is one of my favourite cookies that Mum used to make. I think it's the brown sugar that gives the extra flavour. As in most of her recipes, there was no method written down. Seems like all the good home cooks knew exactly when to blend, mix, beat, stir and fold.
