2 c. corn meal mix
1 egg
milk (about 1 ½ c.)

Oil and heat 9" skillet or pan. Preheat oven and skillet to 425º. Combine cornmeal mix, egg. Slowly add milk - should look like pancake batter. Pour into oiled/heated skillet. Cook at 425º for about 20min till golden brown. Makes 1 pan of cornbread.
 

Dressing

2 pans crumbled cornbread
1 stalk of chopped celery
2 chopped onions
8-10 chopped hard boiled eggs
sage
all seasoning
poultry seasoning
chicken broth - approx. 6-8 cans
tablespoon of oil

Directions:
Dressing will need 2 pans of cornbread. Preheat oven temp on 425º. Crumble cornbread it up into a large roasting pan and add celery, onions, eggs - Using hands mix all together. Lightly coat with sage, all seasoning, and poultry seasoning. Mix to taste (you may need to add more). If you can taste the all seasoning but something still tastes off - add more sage. Add chicken broth, pouring slowly over the mixture – take your time because the cornbread will drink up the broth. You want it to be moist, but no watery spots on top. Add oil and bake for about 45 min or until golden brown on top.

This makes enough to fill a roasting pan. If you don't need that much then use only 1 pan of cornbread and 1/2 of everything else. You can also add turkey or sausage or squash etc.

This was my grandma's recipe - a family favorite for Thanksgiving AND Christmas!!
