½ Cup Coconut Oil (Not melted at all)
1¼ Cups light Brown Sugar
2 Teaspoons Vanilla Extract
¼ Cup Coconut Milk (Thicker Thai version is best)
¼ Cup Unsweetened Apple Sauce
2¼ Cup All Purpose Flour (not packed)
1 Teaspoon Baking Soda
½ Teaspoon of Salt
2 Cups of Vegan Chocolate Chips
Flaky Sea Salt

Directions:
Directions:
1. Preheat oven to 375º (F). Line a large baking sheet with parchment paper.
2. In a large bowl whisk together the coconut oil, brown sugar, and vanilla, beating until well combined. Add in the coconut milk and apple sauce and whisk until well combined; set aside. In a separate bowl combine the flour, baking soda and salt; whisk until well combined.
3. Add the dry ingredients into the wet mixture and, using a wooden spoon or sturdy spatula, stir until ingredients are combined. The batter will be very thick. Fold in 1¾ cup of chocolate chips.
4. Scoop 3 tablespoon sized mounds of dough onto the prepared cookie sheet, leave a few inches apart between each cookie for spreading. Bake for 9-10 mins or until the edges are golden and centres have set. Press remaining chocolate chips on top of warm cookies and sprinkle with sea salt. Cool cookies for 15 mins before transferring them to cooling rack.
