olive oil
2 large, diced onions
2 large celery stalks, diced
2 lbs. ground beef
½ c. Matzo meal
14 oz. to 16 oz. can diced tomatoes (divide juice and tomatoes)
basil
salt
pepper
2 tsp. sugar

Directions:
Directions:
Heat oven to 350º.

In large fry pan, add olive oil and heat pan. Add diced onions and celery to pan. Fry until browned. In large bowl add beef, Matzo meal, tomato juice, basil, salt, and pepper. Mix well. Add ½ of the browned onion and celery to meat mixture and shape a loaf. Place the other ½ of the onion and celery in the baking dish with the meat loaf on top. Bake until browned (about ½ hour). Mix the sugar into the diced tomatoes and pour over meat loaf. Baste several times. Bake for 1 hour, 15 minutes.
