1 c. butter, softened
1-½ c. white sugar
2 large eggs
2 tsp vanilla extract
3-½ c. all purpose flour
1 tsp baking powder
¼ tsp salt

Royal Icing using meringue powder

4 c. icing sugar
3 TBSP meringue powder
½ tsp peppermint extract or almond or vanilla (optional)
½ c. - ¾ c. warm water

In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder and salt. Cover (use saran wrap) and chill dough for at least an hour (or overnight).

Preheat oven to 400º. Roll out dough on floured surface ¼ to ½ inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheet.

Bake 6-8 minutes in preheated oven. Cool completely.

Royal Icing

Blend all ingredients with mixer (add food coloring if desired). As you are icing this icing dries fast so work in small amounts keeping unused icing in air tight container. Spread icing on cookies with knife and decorate - leave to air dry for a couple hours then store in tins.
