8 tbsp salted butter
1/2 cup white sugar
1/4 cup packed light brown sugar
1 teaspoon vanilla
1 egg
1 1/2 cups all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon of salt

Directions:
- Preheat the oven to 350 degrees. Melt the butter in the microwave for about 40 seconds to just barely melt it. It shouldn't be hot- but it should be almost entirely in liquid form.
- Use a mixer to beat the butter with sugars until creamy. Add the vanilla and the egg; beat on low speed until just incorporated- 10-15 seconds or so (if you beat the egg for too long, the cookies will be stiff).
- Add the flour, baking powder, and salt. Mix until crumbles form. Use your hands to press the crumbles together into the dough. It should form one large ball that is easy to handle (right between "wet" dough and "dry" dough).
- Roll the dough into balls and place on a cookie sheet. Bake for 9-11 minutes. DO NOT OVERBAKE! They should look light and fluffy!

This recipe called for baking powder not baking soda, I made that mistake and it was the best mistake ever! You can try it with baking soda, but I think powder is where it's at. Also, if you just have to add chocolate chips you can. The original recipe calls for 3/4 cup of chocolate chips. I always put sprinkles in the dough for holidays. People gobble these up!
