Ingredients: ½ cup applesauce ½ cup mashed banana ½ cup peanut butter ½ cup honey (can substitute ¼ cup maple syrup for ¼ cup honey) 1 teaspoon vanilla 1 cup large flake rolled oats ½ cup whole wheat flour ¼ cup skim milk powder 1 teaspoon baking powder ½ teaspoon baking soda ½ teaspoon salt 1 teaspoon cinnamon 1 teaspoon ginger 1 cup of fresh or frozen cranberries, halved 1/2 cup of almonds ¾ cup of raisins ¾ cup of coconut ¼ to ½ cup of ground flax 1 ½ cups of Corn Flakes, Rice Krispies, Bran Flakes or Vector cereal or a mixture of these.

Directions:1. Preheat oven to 350º. 2. Line baking sheets with parchment paper. 3. Mix applesauce, mashed banana, peanut butter, honey, and vanilla together until smooth. 4. Whisk together rolled oats, whole wheat flour, skim milk powder, baking powder, baking soda, salt, cinnamon and ginger. 5. Fold dry ingredients into wet ingredients. 6. Then add cranberries, almonds, raisins, coconut, ground flax, and cereals. Stir until combined. 7. Bake in preheated oven for 10-12 minutes, until lightly browned at the edges. |
