2 large eggs at room temperature
I C sugar
1 1/4 C of sifted flour
2 teaspoons of anise oil.
Lemon zest (optional)

Directions:
Directions:
Butter and flour cookie sheets. Set aside. Beat eggs until frothy then add sugar and beat 30 minutes on medium. Add flour and flavoring and beat 5 more minutes. Drop by the teaspoon onto prepared cookie sheets and let them sit overnight or 10 hours. Bake at 350 degrees for 10-12 minutes.The cookies will come out looking as though they are frosted. Makes two dozen.

Enola and brother Jim were married for nearly 30 years. She came from Kansas and has never lost that sweet, slow drawl.They met while he was in the Air Force and Nola was a hairdresser. They came to Pennsylvania when he got out in1956. Debbie, Charlene, Randy, and David grew up next door to Mom and Dad and developed a special relationship with them. Jim was an industrial furnace salesman, and part of his job was to be onsite for the first run of the furnace. He was so bright--he passed away in 1983 at age 49 from colon cancer, and he didn't have a chance to reach his full potential. Enola had a beauty shop for a few years. Debbie is a journalist, Charlene a nurse, Randy a large equipment operater, and David is a chef and master gardener. Enola is the matriarch of a very close family of children, grandchildren, and great-grandchildren.
