1 cup of natural (well stirred) peanut or almond butter
3/4 cup of sugar (coconut sugar, brown sugar or regular sugar all work)
1 egg
1 tsp vanilla
1 tsp baking soda
1/4 tsp salt
1/3-2/3 cups of your favorite chips (I prefer dark or semi-sweet.)

Directions:
Directions:
Mix all the ingredients (except the chips) and stir until well blended. Should be a fairly thick consistency. Add your chips and stir them in. Put parchment paper over a baking sheet and drop 12 spoonfuls onto tray. If it's thick you may have to help shape them.
Bake at 350º for 8-10 minutes (don't overbake). Makes 12 cookies.
