1 C Sugar
½ C Flour
¼ C Butter (melted)
⅛ tsp salt
2 Eggs (separated)
2 Lemons (juice and grated peel)
1 C Milk
1 9" unbaked pie shell

Directions:
Directions:
Combine sugar, flour, salt, butter and egg yolks. Beat until smooth. Beat in lemon juice and peel, add milk, beating slowly. Beat egg whites until stiff, but not dry. Fold in.
Bake pie shell for only 5 minutes at 350º. Pour in filling. Bake an additional 40 minutes or until filing is firm. When cut, there will be a delicate cake on top and filling on bottom.
