1-15-16 oz. can crushed pineapple
1 Cup granulated sugar
2 cinnamon sticks, broken in half

DOUGH:
2½ Cups all-purpose flour
1 Cup Crisco
1 tsp. salt
2-3 Tbsp sugar

FILLING:
Place contents of crushed pineapple in sauce pan, add 1 Cup sugar and 2 cinnamon sticks broken in half. Heat slowly until it boil, absorbing all the sugar and having a cartelized or amber look. Be careful not to burn. Cool completely before using

DOUGH:
Put flour, sugar, salt in a medium size mixing bowl. Stir to combine. Cut shortening in with a pastry blender, or two forks until the dough resembles crumbs. Slowly add water, a Tablespoon at a time until it is completely absorbed by the dough and the dough doesn't stick to you fingers. Too much water and the dough will be come "pasty" and not enough water and it won't stick together.
Roll the dough out on a lightly floured surface and cut into circle about 2½ - 3" wide. Place about 1½ - 2 tsps. filling on center of the dough. With you fingers, put water on one half of the edge. Fold over, pinch to seal and turn over. Place on cookie sheet.

Place cookie sheet in the oven at 350 and bake until edges are golden brown, about 45 minutes, depending on your oven. Remove to a cooling rack and cool completely.

Store extra filling in refrigerator for use next time.
