Cookie Mixture: Cream Cheese Filling:
1/2 cup butter
1 cup brown sugar 4 oz. cream cheese
1 egg 1 cup confectioners sugar
1 tsp. vanilla 2 T. butter(softened)
1 cup flour
1/2 tsp. cinnamon
1/2 tsp. baking powder
1/2 tsp. baking soda
dash of salt
1 cup oatmeal
1/4 cup raisins
1 cup grated carrots
Directions:

Combine 1/2 cup of butter with the brown sugar, mix well, add the egg and vanilla, mix well.
In a separate bowl add flour, cinnamon, baking powder, baking sida and salt; add dry ingredients to wet mixture and mix well. Then add carrots, rasins and oatmeal, again mix well. Spoon this mixture onto parchment paper lined cookie sheet, approx T. size.
Bake in 350 oven for about 15 minutes.
Make cream cheese filling place between two cooled cookies and enjoy!
