2¼ c. all-purpose flour
½ t. soda
1½ t. ginger
¼ t. salt
½ c. soft butter
½ c. sugar
1 egg, beaten
¼ c. dark molasses
¼ c. buttermilk

Grease baking sheets lightly. Start oven 10 minutes before baking set to moderate (375º).
Sift flour, measure, resift 4 times with next 3 ingredients. Cream butter until shiny, add sugar gradually, creaming well. Beat in egg until fluffy, then molasses. Add flour and buttermilk alternately in 2 or 3 portions, beginning and ending with flour and beating until smooth after each portion.
Turn dough out onto waxed paper, press together, and chill several hours. To bake, divide into 3 portions, removing 1 portion at a time.
Roll out on lightly floured pastry cloth about ¼" thick. Cut with 2" cutter.
Place on the baking sheet.
Bake at 10-12 minutes or until lightly browned. Remove to cake racks to cool.
