2 cups cottage cheese

2 8oz cream cheese

1½ cups sugar

4 eggs

3 tablespoon cornstarch

3 tablespoon flour

1½ teaspoons lemon juice

1 teaspoon vanilla

½ cup butter melted

2 cups sour cream

Beat cottage cheese until smooth using a food processor or immersion mixer. Do not over beat. Transfer to mixing bowl and beat in cream cheese until smooth using an electric mixer. Gradually beat in sugar and then eggs. Turn mixer on low and beat in cornstarch, flour, lemon juice and vanilla. Add melted butter and sour cream and beat until just smooth.

Pour in 9 inch spring pan lined with parchment paper and greased sides. Bake at 325 degree for 1 hour and 10 minutes or until firm around the edges and slightly brown. Turn off oven and allow cake to remain in the oven for 2 hours. Remove from oven and allow to cool completely. Cover cake with plastic wrap and place in refrigerator until completely cool. Overnight is best.

Remove from pan and parchment paper. Serve with fruit and/or whip cream.

This is very old recipe that has been enjoyed by my husband's family for years. It makes a very firm cake that will last in your refrigerator for several days.
