3 Well beaten eggs
2 1/4 Cups Sugar
1 Cup cooking oil
3 tsp Vanilla
2 Cups Grated zucchini (Peeled or unpeeled)
3 Cups Flour
3 tsp Cinnamon
1 tsp Salt
1 tsp Baking soda
1/4 tsp Baking powder
1 Cup Nuts (Optional)

Directions:

Preheat oven 350º.

Beat eggs well.

Mix together eggs, sugar, oil, vanilla, and zucchini

Mix dry ingredients separately: flour, cinnamon, salt, baking soda, baking powder, and nuts. Add to wet mixture.

Bake for 1 hour.

Yeilds 2 9"x5" loaves
