1 cup shortening
1 cup sugar
1 cup light brown sugar, firmly packed
2 eggs
1-1/2 teaspoons vanilla extract
1-1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 cups oatmeal
1 cup chopped pecans
1 bag chocolate chips

Directions:

Cream together shortening, sugar and light brown sugar. Add eggs and vanilla extract. Sift together flour, baking soda and salt. Gradually add flour mixture to creamed mixture. Stir in oatmeal, pecans, and chocolate chips. Drop of teaspoonfuls on well-greased cookie sheets. Bake at 350º for 10 minutes or until golden brown.

"The recipe came from Dale Evans of Dale Evans and Roy Rogers fame. I copied it from a 1964 Baltimore Sun Newspaper column. It has been a great favorite of ours ever since. In exchange for a copy, First Lady Barbara Bush contributed a couple of recipes to a cookbook created by a ladies' group I belonged to while living overseas. During an interview a few years later, Mrs. Bush cited Cowboy Cookies as her favorite cookie recipe! I wonder if the recipe came from our cookbook!"
