1 c.flour
1 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
1 tsp. cinnamon
2 tbsp. butter or margarine
¼ c. sugar
¼ c. brown sugar
1 egg
¼ c. applesauce
1 tsp. vanilla extract
2 c. quick oats (can use regular old fashioned oats if put through food processor to chop)
1 c. dark chocolate chips

Directions:
Directions:
Mix dry ingredients in separate bowl.
Cream together butter and sugars.
Add egg, applesauce and vanilla.
Add oats and flour mixture (dough will be very thick).

Drop by teaspoon on baking sheet (can use parchment) and flatten slightly.

Bake 10-12 minutes at 350 F until cookies are light brown on edges.
(recommended to make a test cookie first in case more flour or additional liquid needs to be added).

This is a fantastic breakfast treat in the Orjala household when they are still warm (as the quarantine has made some family members nocturnal.
