4½ cups flour
1 cup white sugar
2 tsp baking powder
½ tsp baking soda
1 tsp salt
1 beaten egg, plus enough sour milk to equal 1½ cups (see recipe for sour milk below)

Sour Milk:
You can either use naturally soured milk (past due date), or add 1 tbsp lemon juice to milk and allow to stand for 10 minutes to achieve correct acidity.

1. Preheat oven to 350º. Grease cast iron pan and set aside.

2. Mix together dry ingredients (flour, sugar, baking powder, baking soda and salt). In separate mixing cup, beat the egg and add enough sour milk to equal 1½ cups.

3. Add the milk and egg mixture to the flour bowl and mix together. You may need to use clean hands to fully combine.

4. Place dough into cast iron pan and bake for 1 hour. Allow to sit for 10 minutes and then wrap in a large dish towel for keeping.

Noni says: Gram made this from sour milk. I believe the original recipe called for buttermilk, but she only used sour milk. (If you don’t have sour milk, you can add 1 tbsp lemon juice to milk and let that sit for 10 minutes.) For a while, we lost the recipe, and I had several variations that my Son-In-Law, Mike, and husband, Jack, always said were just as good as the original Soda Bread… After several years of missing the recipe, I found the original recipe, plus the one that Gram made up until we found the original…It is 2020 now and I know this recipe is at least from the 1920’s!
