½ lb. chopped Dates
½ Cup Cold Water
2 Tbsp. Brown Sugar
Grated rind of ½ orange
2 Tbsp Orange Juice
1 Tsp Lemon Juice

ROLLED OATMEAL COOKIES
2 Cups Flour
1 Tsp. Baking Soda
1 Tsp. Salt
2 Cups Quick Oats
1 Cup Brown Sugar
1 Cup Butter
½ Cup Sour Milk (add 1 Tbsp. vinegar to sour regular milk)

Chop dates. Combine dates, cold water, brown sugar and orange rind in a saucepan. Cook over medium heat until thick and smooth. Remove from head, add orange and lemon juice and mix well. Cool before spreading. This is the same filling used in the Date Square recipe.

ROLLED OATMEAL COOKIES
Mix Flour, Baking Soda, Salt, Quick Oats and Brown sugar. Melt the butter and mix with the dry ingredients. Stir in the milk, mixing well. Chill dough for 30 min. Roll out dough to ¼ inch thick on a floured surface. Cut out cookies with a floured 2 or 3 inch glass in diameter. Place on a parchment lined cookie sheet and bake for 350º until lightly browned, approx. 10 to 15 minutes.

My Granny in Thurso (PaPa's Mom) would come to visit a couple of times a year. When she was there we would always ask her to make these cookies. Since then I make the cookies around Christmas.
