½ pound unsalted butter (2 sticks)
1 cup brown sugar, firmly packed
½ cup minus 1 t. granulated sugar
2 eggs
1 t. vanilla
1½ cups flour
1 t. baking soda
1 t. cinnamon
½ t. salt
3 cups Quaker Oats (old fashioned, uncooked)
1 cup Craisins (original flavor)
¾ cup shredded sweetened coconut

Directions:
Directions:
Preheat oven to 350º.
Beat together the butter and sugars until creamy.
Add the eggs and vanilla and beat well to mix. Add the combined flour, baking soda, cinnamon and salt, mixing well. Stir in the Oats, Craisins and coconut by hand, mixing well.
Wrap dough in plastic and refrigerate 30 - 40 minutes.
Drop by rounded tablespoonfuls onto ungreased baking sheets. Bake for 10 - 12 minutes or until golden brown. Cool on baking sheet then remove to cooling rack.
