"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Dough:

5 c. flour
1½ t. salt
1-2 c. water (enough to make dough into sticky ball)

Filling:

6 c. cottage cheese, 2 dry and 4 small curd
2 eggs
⅓ c. sugar
1½ t. salt
1-2 c. raisins

Directions:
Directions:
Make dough and put in fridge. Best if dough sits overnight.

Pull out the next day. Take 2 cups of the cottage cheese and strain the liquid out, which makes the "dry" cottage cheese. Combine all filling ingredients and set aside. Place a sheet on the table and sprinkle generously with flour.

Roll out dough then carefully stretch until very thin. Use a little melted crisco to help in the process. After it is all stretched thin, spread filling on and roll tightly. Bake at 350º for 45 min. to 1 hour.
