1 c. soft butter
1 1/2 c. sugar
2 eggs
1 1/2 t. peppermint extract ( or about 4 drops of YL peppermint oil)
3 drops green food coloring
3 c. flour
2 t. baking powder
1 t. baking soda
2 t. cream of Tarter
1/4 t. salt
6 oz. Andes mints crushed or Nestle mint truffles if you can find them (Christmas time )
6 oz. min chocolate chips

Directions:
Directions:
Cream butter and sugar about 3 minutes - should be fluffy
Add eggs, green food coloring and peppermint extract. Beat another 2-3 minutes
Add dry ingredients. Mix until combined.
Add mint and chocolate chips

Line baking sheets with parchment paper. Drop cookies using a 2 T. cookie scoop.

Bake 350º about 10 minutes. DON'T OVER BAKE.

Note: Smaller cookies require reduced baking time
