2 c. flour
1 tsp. baking powder
1/4 tsp. salt
3/4 c. sugar
4 T. fat...(I am guessing that would be about 1/2 stick of butter, but, I'm sure she used Crisco.)
2 eggs
1 tsp. vanilla

Directions:
Directions:
Mix and sift dry ingredients; cut in shortening and then add well-beaten eggs and vanilla. Knead lightly on floured board and roll about 1/8 inch thick. Cut with small round cookie cutter and place on lightly greased cookie sheet. Brush tops with melted butter and bake in a hot oven (425º) for about ten minutes. They puff up in the middle when done and can easily be made with Gluten Free flour. If you add cinnamon and anise, they become "Biscochitos", the State Cookie of New Mexico.

This was my favorite cookie as a child, especially the cookie dough bits my mom gave me. The recipe is very old, from a La France Cookbook of about 1930 vintage.
