2 c flour
4 tsp baking powder
1/4 tsp baking soda
3/4 tsp salt
2 tbsp ice cold butter
2 tbsp lard (yes! Lard! No substitute!)
1 c cold buttermilk

Directions:
Directions:
Preheat oven to 450º
Combine dry ingredients. Rub ice cold butter and lard into dry ingredients with your fingertips till it looks like bread crumbs. (The faster you do this the better) Make a well in the center & pour in the buttermilk. Stir till dough comes together. It will be very sticky. Turn onto a heavily floured surface and dust the top with flour. Gently fold dough over on itself 5 or 6 times and press into a big circle 1 inch thick. Cut out biscuits with a 2" cutter. Place on baking sheet so they just touch. Reform scraps but dont overwork the dough, and cut out the last few biscuits.
Bake 15 - 20 minutes till tall and light golden on top.
