Pan: 13 x 9 Preheat: 350º

2 cups flour
2 tsp baking powder
1½ tsp baking soda
1 tsp salt
2 tsp cinnamon
2 cups sugar
1½ cups vegetable oil
4 eggs
2 cups raw carrots
1 (8½ oz) can crushed pineapple, drained
½ chopped nuts

Cream cheese frosting of your choice

Directions:

Sift together flour, baking powder, baking soda, salt and cinnamon. Place in a large mixing bowl. Add sugar, oil and egg; mix well. Stir in carrots, pineapple and nuts. Pour batter into a greased 13 x 9 baking pan. Bake in a preheated 350º oven until the top springs back when lightly touched about 35 to 40 minutes.

Let cool in pan a few minutes, then turn cake out on to a wire rack to cool completely. Frost with your favorite cream cheese frosting.
