Graham Cracker Crust:
1 ⅔ C. finely rolled graham cracker crumbs (1 Stay Fresh Pack Honey Maid ones work)
¼ C. Granulated Sugar
⅓ C. Butter, softened.

Filling:
2-3 pt. Fresh Strawberries (remove stems & cut flat at end.)
8 oz. Cream Cheese
1 T. Lemon Juice
1 tsp. Vanilla Extract
½ pt. Whipping Cream.
(Optional: Mint leaves to decorate top)

Graham Cracker Crust:

Combine crumbs, sugar and butter.
Blend well with fork.
Using back of large spoon, press crumb mixture inside 9" pie plate to coat bottom and sides evenly.
Bake at 375º for 8 minutes.
Set on wire rack to cool.

Pie Filling:

Line cooled graham cracker crust with strawberries (Flat side on crust)

Mix cream cheese, lemon juice, vanilla and sugar.
Fold in whipping cream (after whipping it!)
Pour or spoon over strawberries to fill pie plate.
Decorate with fresh strawberries and mint.
Refrigerate.

My mom used to make this when we had company. I truly dislike cheesecake...but I like this... probably because it is filled with strawberries! It's a quick, yet impressive looking dessert.
