Do all of the sisters remember Gramma Ferber’s Chicken Fricassee served over rice? I think it was one of my most favorite dishes she made. My story about this recipe is as follows: Every summer two of us sisters would spend a week with Gramma and Grampa. It was really neat because we could stay upstairs where there was a record player and old records left by Aunt Hildie’s girls, Bev and Karen. Anyway, one day while I was staying there I asked Gramma Ferber to teach me how to make chicken fricassee. Here were the instructions (given in heavily accented English):

1. Boil a stewing hen. It gotta be a stewing hen because they taste better.
(ME: How long Gramma? HER: Until it’s done).
2. Empty and save the broth. Melt one pound of butter in the kettle. Then add flour which she did by the handful.
(ME: How much flour Gramma? HER: Enough).
3. Add broth to make gravy.
(ME: How much broth Gramma? HER: Enough so it gets thick!) Simmer until thick
4.  Add boned chicken to broth. You’re done!
